Introduction
Soave is a small walled town on the edge of the Verona plain, and it is two things at once: one of the most complete medieval wall circuits in northern Italy, and the name on several million bottles of white wine a year.
The Scaliger walls run down from the castle on the hill and enclose the whole town, twenty-four towers intact, in a circuit you can see entire from the motorway. Inside is a single main square, a handful of Venetian Gothic palaces and not much else.
The hills behind are volcanic, planted almost entirely with Garganega, and the difference between the wine made on them and the wine made on the flat below is the whole argument of Soave.
